Abstract

Makanan merupakan kebutuhan dasar manusia yang wajib dipenuhi untuk meningkatkan kecerdasan dan produktivitas kerja. Masalah kesehatan khususnya masalah hygiene dan sanitasi makanan merupakan masalah yang sangat kompleks dan sebenarnya bukan merupakan masalah yang baru. Kasus keracunan makanan sudah sering terjadi di Indonesia, bahkan negara maju seperti Amerika sekalipun. Tujuan penelitian ini adalah untuk mengetahui Hygiene dan Sanitasi Penjamah Makanan Jajanan di Tugu Salak Kota Padangsidimpuan. Jenis penelitian ini adalah kualitatif, pendekatan yang digunakan adalah pendekatan studi kasus (case study). Penelitian dilakukan di Tugu Salak Kota Padangsidimpuan pada 3 pedagang, 3 pelayan, dan 3 konsumen. Dari hasil wawancara yang dilakukan personal hygiene dan sanitasi lingkungan pada pedagang masih bisa dikatakan kurang, karena mayoritas pedagang di tugu salak masih jarang ada yang menggunakan celemek, sarung tangan dan penutup kepala. Personal hygiene pada pedagang jajanan di tugu salak kota padangsidimpuan masih kurang atau belum memenuhi kriteria yang ditetapkan oleh Kepmenkes No 942/Menkes/SK/VII/2003. Dan sanitasi lingkungan pada pedagang jajanan di tugu salak kota padangsidimpuan juga buruk karena masih ada pedagang yang membuang sampah ke badan air. Bagi pedagang disarankan agar lebih memperhatikan hygiene dan sanitasi dirinya dengan menggunakan peralatan pelindung kebersihan guna mencegah kontaminasi silang dari penjamah kepada makanan.
