Abstract

Desa Parsalakan Dusun Huta Tunggal merupakan salah satu kecamatan di Kabupaten Tapanuli Selatan, dengan tanaman utamanya adalah salak. Sebagian besar masyarakat mempunyai lahan salak dan merupakan petani salak. Permasalahan yang sering dihadapi adalah harga salak yang sangat fluktuatif, serta pengetahuan dan keterampilan masyarakat dalam mengelola hasil dan mengolah salak masih sangat terbatas. Mendasarkan pada permasalahan yang ada, maka prioritas permasalahan perlu yang diselesaikan dan solusi yang di lakukan adalah peningkatan nilai tambah buah salak dan peningkatan keterampilan dalam pengelolaan salak. Tujuan program pengabdian masyarakat ini untuk meningkatkan nilai tambah buah salak melalui pengolahan salak menjadi produk bolu salak dan selai salak dan meningkatkan pengetahuan, wawasan, dan keterampilan masyarakat dalam pengolahan salak. Hasil kegiatan pengabdian pada masyarakat menunjukkan masyarakat sasaran yaitu ibu-ibu PKK, memberikan tanggapan yang sangat baik dengan berpartisipasi mengikuti kegiatan dengan sebaik-baiknya. Kegiatan pengabdian masyarakat dapat meningkatkan pengetahuan, wawasan dan keterampilan warga Desa Parsalakan Dusun Huta Tunggal dalam mengelola dan mengolah buah salak menjadi produk bolu salak dan selai salak .
